  • 2 lbs ground beef lean or regular
  • 1 box Stove Top stuffing mix any flavor
  • 2 eggs large
  • 1 cup milk any kind
  • 1 yellow onion finely chopped
  • 1/2 cup ketchup divided

Optional Garnishes

  • 2 tbsp fresh parsley chopped
  • 1/4 cup extra ketchup for serving
  • 1/2 cup shredded cheese optional topping

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a baking tray with parchment paper or lightly grease a loaf pan.
  • Peel and finely chop the onion. Set aside.
  • In a large mixing bowl, combine ground beef, dry stuffing mix, eggs, milk, chopped onion, and half the ketchup.
  • Mix everything together using clean hands or a large spoon until well combined but not overmixed.
  • Shape the mixture into a loaf and place it on the tray or in the loaf pan.
  • Spread the remaining ketchup over the top of the loaf.
  • Bake for 45–50 minutes or until the internal temperature reaches 160°F (71°C).
  • Remove from oven and let the meatloaf rest for 5–10 minutes before slicing and serving.
