- 3 pounds beef chuck roll
- 2 tablespoons olive oil
- 4 cloves garlic crushed
- 1 onion sliced
- 2 sprigs fresh rosemary
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup beef broth or water

- 1 tablespoon fresh parsley chopped
- 1 teaspoon crushed red pepper
- 1 teaspoon lemon zest
Pat the beef chuck roll dry. Rub it with olive oil, then massage with a mixture of salt, pepper, paprika, and crushed garlic. Let sit for 10–15 minutes.
